Peterson Nutrition & Fitness was founded in 2001 and is the private practice of Elisabeth Peterson, RDN, CEDRD-S. Elisabeth exists to educate and empower each individual to affect lifestyle changes toward optimal wellness through balance, comprehension and application of the complex nutritional and activity requirements of the body. Elisabeth’s practice is grounded in current dietetic science and research. For over twenty-five years she has used the somato-psycho-social model and incorporates non-diet concepts, mindful eating, and body acceptance. She works with individuals, families and couples locally, domestically and internationally to facilitate client progress towards normalized eating. Elisabeth strongly believes the key to healing and building resilience is connection with others who can validate, empathize, and understand our feelings and experience. Therefore she facilities two groups: a processing group and book group that reads and discusses current relevant topics. In addition to being a Certified Intuitive Eating Counselor since 2007, Elisabeth is also credentialed through the International Association of Eating Disorders Professionals (iaedp) Foundation as a certified eating disorder registered dietitian and supervisor. This credential is also recognized by the Academy of Nutrition and Dietetics. Elisabeth is on the Certification Committee for iaedp. Currently Elisabeth is providing services virtually and wants each client to feel safe, heard, and connected. If you have questions or concerns she is happy to chat with you about how telehealth works.
